Roasted Garlic Olive Oil and Black Pepper Popcorn
Movie night? Forget the butter... this popcorn is air popped and tossed in a black pepper and olive oil mixture for a tasty snack!
PREP TIME: 5 minutes
COOK TIME: 0 minutes
TOTAL TIME: 5-10 minutes
- 1/2 cup Popcorn Kernels
- 1-2 tablespoons of STAR Family Reserve Olive Oil with Roasted Garlic
- 1 teaspoon Fresh Ground Black Pepper, more or less to taste
- Kosher Salt to taste

1) In a large bowl add the olive oil and black pepper.
2) Add the kernels to the air popper and following your manufacturer's directions to pop the corn until all the kernels have been popped.
3) Gently toss the popped corn in the olive oil and black pepper until coated evenly.
4) Season with Kosher salt to taste.
5) Enjoy!

Arugula, Watermelon and Feta Salad
We made this one a couple of years ago for a 4th of July party and there was nothing left!

Ingredients

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/4 cup minced shallots (1 large)
- 1 tablespoon honey
- 1/2 cup good STAR California Olive Oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 6 cups baby arugula, washed and spun dry
- 1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
- 12 ounces good feta cheese, 1/2-inch diced
- 1 cup (4 ounces) whole fresh mint leaves, julienned

Smoked Salmon Pasta with Capers
Typically Smoked Salmon Pastas are served with a cream sauce, but this dairy-free version is full of flavor and lower in fat. Feel free to substitute regular penne with gluten free pasta for those of you who are gluten sensitive!

| Smoked Salmon Pasta with Capers |
- 1 lb penne pasta
- 8 oz smoke salmon, chopped
- 1 cup spinach (frozen then thawed)
- 15 cherry tomatoes cut in halves
- 1/2 lemon
- 1/4 cup chopped basil
- 2 tbsp STAR Garlic Olive Oil
- Salt and Pepper
- 2 tbsp STAR Non Pareil Capers
- Cook the pasta according to directions. While pasta is cooking heat STAR Garlic Olive Oil in a skillet.
- Sautee tomatoes in the skillet for about 3 minutes and then add the salmon, spinach, and STAR Non Pareil Capers. Heat for 2 minutes more.
- Drain pasta and put it in a bowl, then add the ingredients from the skillet to the bowl and toss to combine.
- Sprinkle the basil and squeeze lemon juice on top.
- Enjoy!
