Balsamic Sun Dried Tomato Chicken
This easy to make recipe combines the unique flavor of balsamic with the rich flavor of sun dried tomatoes. Great meal for a lazy sunny afternoon.
Directions:
Serves: 4 Preparation Time: 10 minutes Cooking Time: 45 Minute
- 4 lbs. chicken thighs, with or without the skin
- ¼ cup STAR Family Reserve Extra Virgin Olive Oil with Omega-3 DHA
- ¼ cup Cara Mia Sun Dried Tomatoes, chopped
- 2 tbsp. STAR Balsamic Vinegar
- 1 tsp. dried oregano
- 1 tbsp. dried chopped onion
- Sea salt and freshly ground black pepper to taste
- Grated Parmesan cheese and chopped basil for garnish
Directions:
- Preheat your oven to 350 F.
- In a bowl, combine the sun-dried tomatoes, balsamic vinegar, oregano, olive oil, and season with salt and pepper to taste.
- Arrange the chicken in a single layer in a cooking dish, and pour the tomato mixture on top.
- Bake for 45 minutes, or until the chicken is well cooked.
- Serve on top of pasta or rice and top with grated parmesan cheese and chopped basil.
